instance "huevos pasado por agua" don't even become soft boiled, they
are raw
so far as Americans are concerned

Coahuila Sausage made of pork leg, seasoned with ancho chile

Enchiladas de olla [masa con chile ancho-tortillas-, rajas de poblano,
queso fresco rallado]
