Default REC - Dreamy Orange Chicken

Dreamy Orange Chicken

Recipe By :Carol Peterson
Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 tablespoons unsalted butter
4 boneless skinless chicken breast halves
8 slices peeled oranges -- 1/4" thick
3/4 cup fresh orange juice
2 tablespoons grated orange zest
1/2 cup heavy whipping cream
salt and white pepper -- to taste
cayenne pepper -- to taste

Preheat oven to 250°F.

Melt the butter in a large skillet over medium heat. Add the chicken
breasts and saute until golden, about 3-4 minutes per side.

Add the orange slices and saute for a few minutes on each side. Remove
from the pan and set aside. Add the orange juice and zest to the
chicken; mix thoroughly. Continue cooking until the chicken breasts
are tender, about 8-9 minutes. Remove chicken to a baking pan, cover,
and place in the oven to keep warm.

Add the cream to the skillet and heat to boiling over high heat. Boil
for 2-3 minutes, stirring to deglaze the pan. Add salt and white
pepper to taste. Pour cream sauce into a gravy boat for serving.

Serve the chicken breasts with two sauteed orange slices on each
piece. Pour cream sauce over the top, then sprinkle with cayenne
pepper to taste.

MOST of us lived in some variation of that theme back in the day. Mom
had an avocado fridge, avocado shag carpet (back when shag wasn't an
Austin Powers-ism), and her kitchen had orange curtains.

Those were good days with bad decor :-)

colored kitchen. I think there were avocado throw rugs in there, too.
Horrifying decor by today's standards, but they were very good days.

Ohh,Nooo! I remember so well how eager many people were to get rid of their
white appliances, my parents included. In an of itself, the coppertone stuff
wasn't all that bad. It's what they combined it with. Personally, I'd opt
for black today. I don't care for stainless steel. The only thing that puts
me off white is that it doesn't stay very white over time.

I grew up in the 70's and we never had any room in our house decorated
in either avocado or orange. My mom hated those colors. She also
hated shag rugs. The closest thing we had to orange in our kitchen was
when we had reddish brown curtains. Throughout all the changes though
the kitchen cabinets have always remained the same, light maple.

Tell him that he sees enough white at work. You're the one who will
cook in the kitchen, so you should make the decorating decisions.

Good Lord, what does she do to them? I have SS appliances in my
kitchen, some old, some new, and none of them are scratched (not even
the sink).... including a stovetop that's at least 20 years old.

I don't know what cabinets we will end up with. I may just have to
bite the bullet and go with white.

Done right, white is very nice.

It sounds good--and I was going to make it for dinner last night (got the
stuff on hand) and then I forgot about it and when I was thinking about
the chicken I wanted out of the fridge I saw the half glassful of Dona
Maria's Musgovian mole sauce and I made chicken mole with rice and some
canned pintos that I smashed and sort of fried in some onion and bacon
fat with a little adobo sauce and the crispy bacon bits and we ate most
of the chicken and the rice and all of the beans (well, I did, anyway)
and then I had to go to the stupormarket and co-op to get some stuff and
then I came home and putzed with the mugshots I'd taken after supper and
Dave Letterman and Craig Ferguson was pretty funny and then it was 1:00
a.m. and I went to bed and then I got up this morning and decided I HAVE
to remake the damn corn relish for the Fair which is why I went looking
for corn last night and I've got the tomato juice processing right now
and I started to chop the red pepper for the relish and in about six
hours I'll TAKE ALL DAMN 20 OF MY CANNING ENTRIES TO THE FAIRGROUNDS AND
TRY TO MAKE A DENT IN THE CRAP IN THE GARAGE THAT'S BEEN THERE SINCE
MEMORIAL DAY SO ROB WILL STOP *LOOKING* AT ME LIKE THAT or maybe I'll
just come home and take a nap. Right after I drink something STRONG.

Steven and I have been arguing over cabinets when we redo the kitchen. He
wants white cabinets. I can't even imagine what they would look like after

My kitchen is white and, I suspect, about 20 years old (in a rental
apartment). Brand: Bruynzeel.

It still looks fine. The surface is some sort of lamination over pressed
wood chips (both of good quality). So maybe you can find an easy to clean
kitchen, too.
