Green And Yellow Squash Kabobs

2 medium green zucchini
2 medium yellow summer squash
3 tablespoons mayonnaise
1 tablespoon salsa verde
= (bottled or homemade)

Heat grill to medium-high heat. Cut squash in half lengthwise, then

into 1-inch slices to form half-moons (you should have about 48 pieces).
Alternating colors, thread 6 pieces of squash onto each of 8 skewers.
Mix
mayonnaise and salsa.

Brush half the mayonnaise mixture over all surfaces. Cover and grill 4
to
5 minutes, turn, brush with remaining mayonnaise mixture and grill 4 to 5
minutes more, until lightly charred in spots.

This recipe yields 8 servings.

Carbohydrates: 4 grams
Net Carbs: 2.5 grams
Fiber: 1.5 grams
Protein: 1 grams
Fat: 4 grams
