MAYIONEZA (Mayonnaise) Qty Measurement Ingredient ------- ------------------- ------------------------------------------------- 1 egg yolk 1 tsp vinegar 2 tsps mustard dash sugar 2 tsps lemon juice 1 to 2 tsp(s) salt 1 cup vegetable oil In a blender, beat the egg yolk. Add the vinegar, mustard, sugar, and salt, blending well. Next add the oil, one drop at a time until all the oil is incorporated and the mayonnaise thiskens. Add the lemon juice last. My recipe is 1 egg 1 cup to 1.5 cup oil (to your taste) 2-3 garlic cloves (to taste) 1 tbsp good grainy mustard 1 tbsp lemon juice (can be lime juice) 1 tsp lemon zest (lime zest) salt and pepper to taste a pinch of sugar (optional) Put everthing in a narrow container that your wand blender will fit into. Immerse the wand blender to the bottom and start it. Slowly rock, raise and lower the running blender 3-4 times. Doesn't take long maybe 30 seconds Now you got mayo. Type and quanity of oil is to your preference. I use just 1 cup of canola...Olive oil isn't one of my favorite oils. Nuetral tasting oil in my opinion would taste better.
