ObFood: Quail soup. The recipe is from _The Cuisine of Hungary_ by
George Lang.

Quail Soup
Becsinált fogoleves

6 servings

3 quail
1 tablespoon butter
1 tablespoon lard or bacon drippings
2 carrots, sliced
1 small onion, sliced
1 cup shelled peas
4 mushroom caps (if possible Boletus), sliced
2 tablespoons flour
1 teaspoon chopped flat parsley
Pinch of salt
6 cups quail broth, or meat stock or water
1/4 cup sour cream

1. Clean the quail and cut into serving pieces.

2. In a heavy-lidded soup pot melt butter and lard. Brown the quail
very rapidly for a few minutes; then add vegetables and mushrooms and
1/2 cup water.

3. Cook slowly, covered, until water almost disappears. By this time,
quail should be quite done.

4. Add flour, parsley and salt; stir well. Add quail broth or meat
stock or water; bring to a boil. Cook over very low heat for a few more
minutes.

5. Just before serving mix in the sour cream. Serve liver dumplings or
marrow dumplings in the soup.

Yes, thank you, all donations are welcome. You have do admit, this is
pretty cool. I assume that there is no car named Boatwright. ) Or,
for that matter, Lonergan. Or Sack.

For dinner tonight, from yesterday, a left over bagel with cream
cheese and novie for Marcel, bread and Italian Fontina for me. The
dregs from yesterday's bottle of wine for me, Orange Juice for Marcel.
A slice of chocolate cake and ice coffee for Marcel and red grapes
for both of us, to nibble on while we watch Jeopardy later on. Marcel
had lunch out and is not hungry for a proper dinner. I will save the
Chicken a la King with brown rice for tomorrow night. )

Yes, I do have to admit that is pretty cool! I'm sure there'll never be a
car (or boat) named Boatwright. Lonergan brings an image of a 1920s/30s
touring car. Sack? Well, all that conjures is, "they got the sack!" :-)

It's often nice to have non-dinner meals like that. Tomorrow night's
dinner sounds good. I've always like Chicken a la King.

I'm eating very light tonight, myself...grilled asparagus and sliced fresh
tomatoes.

What do you mean secret?! The beans, about you actually being a car, have been
spilled quite a few days earlier - see
