Corn should be sweet enough, they'd not need sweetening.

Oh dear, there is no recipe really. About 2 cups cornmeal and 1/4 cup of
flour. 1 Tbs. baking powder and a tsp.of salt. Add 1/2 cup of buttermilk.
Stir until the mixture is well blended. Drop by tablespoonfuls a hot
greased griddle to form small pancakes,. turning with a spatula of course.
They are delicious little tiny cornmeal pancakes!

I like mine just with butter. But of course you may serve with syrup, jam,
etc. as you wish

I like them with just butter. I'm not much of a sweets person. Savory
cornmeal pancakes are perfect with just a dab of butter melting on the

I guess I can understand that. David's family makes what they call "egg
cake" (a pancake sort of thing very heavy in eggs), on which they eat
butter and salt. I gotta have syrup. :-)


I used to like syrup, but ever since experiencing the U.S. Navy's horrible
liquid masquerading as syrup, even the REAL stuff is distasteful to me.
Nowadays I like fruit preserves (jelly, jam, preserves, conserves -- all
that kind of thing) on pancakes or French toast. I like honey on blintzes.

Hmmm.... I've got a good recipe for ricotta pancakes that I haven't made in
a while, and I've got ricotta in the fridge. Now if I can just muster up any
kind of enthusiasm for cooking or for eating before it's too late and I have
to get ready for work...

The sorghum plant is technically a grass that grows heavy like sugar cane.
The canes are crushed to release the juices. The juices are usually
boiled in large flat metal "pans" over wood fires until the water content
is greatly reduced and the consistency becomes syrupy. As with cane syrup
(from sugar cane) and molasses, the mixture darkens as it is concentrated.


This is a picture of a field of sorghum growing. The crop flourishes in
the southern US, as does sugar cane.

If you like treacle, you would probably like sorghum syrup and cane syrup,
although both have a somewhat lighter flavor and color than treacle.

The recipe's in the _Cafe Beaujolais_ cookbook. Yes, the ricotta is in the
batter. I've just sent myself an e-mail reminder to post the recipe
sometime when I'm home.

BTW, I put ricotta to another good use recently, and I think I posted about
it. Googling... OK, I wrote this back on April 3:

"I've also got a Boboli which I'm going to spread with steamed spinach, then
with a mixture of ricotta, eggs, and a tiny bit of nutmeg. Then I'm going to
sprinkle on mozzarella and Parmesan. I'll cook it at 325 or so until the
cheese starts to brown (which ought to be long enough for the eggs to
thicken the ricotta as well). For those unfamiliar with Boboli, go he
