Default How to Blanch Cauliflower

Frozen cauliflower is nice to have on hand for making cheesy cream of
cauliflower soup. This is my method for blanching cauliflower for the
freezer. The cauliflower stays a nice creamy white.

Break cauliflower into flowerets.
Soak for 1/2 hr in solution of 1 tbsp salt to 1 quart water, drain and
rinse.
Blanch 3 min in boiling solution of 4 tsp salt to 1 gallon water.
Cool immediate in ice water.
Pack into ziploc bags or other desired containers.
Seal and freeze.
