It was punchy though! I was taught to boil spinach with garlic to takes off the weird texture that spinach leaves on the tongue. It works. Talking about roast - sage and onion stuffing! Yum. ![]() |

Heheh, I used to fear garlic as a kid, mostly because my dad is such a
garlic nut. He would put a half bulb of it in a stew, and pity the person that mistook a clove for a piece of potato or onion ;-) Now I just love fresh garlic. I like the smell of it on my fingers, but not garlic breath :-D Best, Christine |

When I was a kid we would make "garlic sandwiches" by taking freshly baked bread and putting a smear of butter and some garlic slivers on it. I like the taste of garlic and tend to use a lot of it. |

I think that certain parts of Italy use even less garlic than other
parts, but the main thing I heard from various cooking shows is that Italians just don't often like to eat the garlic itself... it's used more to flavor the oil or whatever dish is being cooked, but since it's put in in larger hunks it can be removed before serving or eating. Personally, I love roasted garlic and could practically eat it with a spoon... it's not spicy or strong that way (don't know about breath with it though... can't smell my own afterward). I also put garlic in a variety of things, including spinach (sauted with onion and olive oil, with an egg added at end) and just loads of other things, especially ethnic ones. I also keep garlic on the counter so I can quickly have 1-2 pieces of crostini, which makes a great snack (cut surface of raw garlic swiped over a toasted slice of baguette, etc. which was first lightly coated with olive oil ...after the garlic, I also add a bit of salt --and a shred of parmesan if I feel like going to the trouble). Italians certainly use garlic, although definitely not as much as some other cultures or some Americans.
