Default Is this salmon still edible after 3 days in the fridge?

I bought some salmon on the 24th and marinated it last night in Soy
spices and vinegar. Do you think it will be ok to eat today for lunch
after 3 days raw in the fridge?

(I apologize if this comes out as a double post, my first post didn't
seem to upload)

It will be fine! Don't worry about it.

(I assume it is fresh, not canned salmon.)

Several facets to consider -

On one hand, it depends on the temperature of your refrigerator, and where
in the refrigerator the food is kept - (my meat tray is kept around 32F,
measured by thermometer). Three days at 35 or lower is likely OK if it
wasn't old when it went in. If your refrig has no gaskets left and the
internal temp is 50F, I'd pass on fresh salmon kept in it.

On the other hand, immersion in vinegar "pickles and preserves" to some
extent (it is an Asian method of "cooking" fish) so it is likely OK now if
it was OK when immersed, because it was preserved.

On yet another hand, (yes, my family is odd), the human stomach of an adult
can accept a lot of food that "has sat out" longer than the time recommended
for food for a person already (chronically) ill.
And it depends on how much of it you eat and with what. Eating an ounce
of salmon with a pint of iced vodka is different than eating half a salmon
alone.

On still another limb, it also depends where you bought it - if it came
off a truck behind a building and/or if it was on special, it is probably
less fresh than if bought at the local modern market. Having a use-by date
of last week presents more risk than having a use-by date of tomorrow.

The "smell test", the "worth the risk", and the "I'll wonder as I eat it"
tests are the old standbys -
IMHO, the smell test is only a verification of what you already knew. If I
have to smell it to tell if it's OK to eat, it probably is past any
enjoyment or nutritional value or I am lost in the woods and scrounging for
food.
----------------

I doubt that properly handled salmon then kept in vinegar in my refrigerator
for three days would "go bad".
Fresh salmon kept in my refrigerator for three days has been just fine (I
had some that was kept for 3-4 days, just two weeks ago).

Yes, this is your second post... if you plan on using newsgroups on a
regular basis, I suggest getting a real news reader. We all have our
favorites, mine is Forté Agent.
http://www.forteinc.com/agent/index.php The newest model has many
more features (like email) than I need, but you may find it
convenient.

Back to the salmon. If it was fresh when you bought it and it's been
properly stored (passing the "sniff" test today), go ahead and cook
it. I wouldn't wait any longer though.

Practice safe eating. Always use condiments.
