Default recipe request

My wife went to Costco on sample day recently and came back with a
cheese ball assortment tray. We really like the one with the peppers
in/on it, but aren't thrilled with the swiss and bacon or berry one.

She wants to go get more, but I am thinking that it would be more
economical for us to make our own since two of the three aren't favorites.

Anyone have any suggestions/recipes?

Cheese balls are easy! :-)
Most are based on cream cheese...

I generally do a 50/50 mix.

8 oz. of cream cheese to 8 oz. of shredded cheddar jack or meunster.
Add additional ingredients as needed.

Soften the cream cheese, add the shredded cheese and other stuff,
(pimentios, chives, minced canned peppers etc.) form into a 1/2 ball on
a piece of cardboard covered with aluminum foil.

Let that set up in the 'frige, then coat the outside by pressing bits of
whatever onto it by hand.

I like to use minced black or green olives, but chopped nuts work for
some people.

You can also form them into logs instead of 1/2 balls.
