Here you go Wayno - a nice southwestern salad,
imminently adaptable. Unfortunately, I misremember where I got the idear - from TV or a book. But it's no cook - no fuss, plenty crunchy. And I added the cumin. Corn and Black Bean Salad From Somebody Nice, adapted by Edrena Jones 4-8 servings 1 can black beans, drained & barely rinsed [Or whatever beans you got, black is beautiful] 1 can whole kernel corn, drained [Or 1.5 cups frozen, cooked al dente] 2 plum tomatoes, chopped, peeled or not or canned if that's what's available 2 stalks celery, sliced nice on the bias 1 small onion, chopped 1 green pepper, chopped 1/2 teaspoon each cumin and chile powder Stir it all together, chill. I think it's best the second day. This doesn't really need salt if the canned things have salt. I'd rather not use pepper here, because I want the taste of the chile pepper & cumin. Served in a lettuce leaf is pretty. My vegetarian family members eat this in pita bread for lunch. |

This sounds a lot like my mom's recvipe...try swapping the green pepper
for red, and the onion for scallions.and garnishing with cubed avocado. Top with cilantro if you're not of the 'soapy' belief system. |

Today's experiment - bowl of "Polynesian Noodles" (Pancit Kanton) coupla spoonfuls of a spicy peanut sauce somebody posted a short while ago, ditto with the C&BB Salad. It all went together well, except it looked a little pale from the peanut sauce. Tasted good, but as you mentioned, need more chile! I like the idea of oil/lemon/pepper business. Kinda makes it a bit Greek or something. BTW - the noodles to me tasted "stale." Anybody ever had that experience? I've never known dried pasta to stale, but this is different. Next time will probably just go for spaghetti or other pasta. Edrena |
