Default Supper tonight

Needed to use up a pork tenderloin that was in the fridge.

Sauteed some chanterelles with onion and garlic then seasoned.

Seared the tenderloin in olive oil.

Added some dijon mustard plus some grainy mustard to the mushroom mix.

Laid out some dried ham, spread some of the mushroom mix over ham,
placed pork on top, added rest of mushroom mixed , rolled the pork in
the ham.

Baked the parcels on top of some sliced cored apples with a bit of wine,
baked for 30 mins, firstly covered with foil then uncovered for last 15
mins.

Deglazed the various pans used with some white wine, added some butter ,
reduced a bit and served as a sauce. Served baked spuds with the meat,
wasn't sure what veg would have worked, so didn't bother

If I had some cider open rather than the white wine, I would have used that.

More than happy with the result

Wow!

Last night I had a bowl of butter bean soup and bread......good stuff!!
