A friend who has fallen on hard times needs some help with prepared
meals. Because of immune system problems, they can only eat meals that have been cooked and then fully frozen. We could make heavy meals like lasagna, stews or soups. But we were wondering if anyone has suggestions for lighter, summer fare that can be cooked and then frozen. Thanks for any input... - Mike in Chicago |

Thanks for any input... - Mike in Chicago Filled crepes freeze well. I like the ham & cheese variety or chicken mushroom crepes. Quesadillas are good and also freeze well; you can make them with a variety of fillings. A fav of mine is simply spinach & mushroom with some Oxaca or Asagio cheese. These things easily reheat in the oven or a toaster oven; thaw in the fridge then about 20 minutes in moderate heat. Anything which allows stock to be made. The other night I ate meaty prime rib bones as BBQ and then used the bones to make a nice beef stock after tossing in some carrots, celery, onion, a bay leaf and some garlic. To the stock I added noodles and had a nice beef noodle soup the next day. Yum! Best of luck to your friend. Jill |
