These didn't seem like recipes that are appropriate at all for outdoor
camping, unless you enjoy spending most of your time with food preparation,
cooking and cleanup. IMO the ideal camp food should be lightweight and
compact, quick to prepare and easy to clean up. Chicken Cacciatore with
spaghetti, tasty though it may be, would be far off the mark, especially for
camping as part of a bicycling tour.

I have to agree. While the recipes might work fine on a backyard grill or
even in an overnight campground stay, I can't see hauling chicken around on
a bicycle tour. I mean, *chicken* is the one thing everyone warns about
going bad so quickly - and ice is rather heavy. So who's carrying the
cooler filled with ice and chicken on a bicycle?

I go car camping frequently, but I wouldn't want to try most of those
recipes; e.g.:

Poached Salmon with Rice
2 Salmon steaks, cut 1 thick
1 leek, thinly sliced *
1 carrot, thinly sliced
6 whole pepper corns
A dash of thyme
A bay leaf *
A splash of dry white wine
1 tsp. chives
5 tbs. butter or packets*
1/4 lemon

I am *not* going to shlep all that along for a single meal, regardless
of the fact that I have a car and a cooler. I've made some pretty darned
good 1-2 pan meals while camping, but this is nuts. A bay leaf? Splash
of dry white wine? Oh puh-lease!
