I'm looking for some suggestions for pasta salad made-to-order.
My company is considering opening a booth at a local farmer's market selling pasta-made-to-order. We will be selling hot pasta to order but I thought pasta salad made-to-order would go well in the Summertime. We want to do this in a farmer's market environment so we won't have a full-blown kitchen available to us. There will also be one person working by themselves. I hope someone could suggest the follow: - Any unique pasta salad recipes - Easy ways to create pasta salad to-order (like using ketchup bottles to squirt the Italian dressing, etc) Thanks -Allen |

Sprinkle of cumin on top. Maybe ranch dressing cut with mayo so it's not so strong. Pasta Mexicano? Edrena on the border |

You could have a selection of different marinated vegies, a few salad dressings and let people make their own and charge by the pound. With the popularity of low carb foods, I am not sure that opening up a business that features a high carb food such as pasta is the best way to go about making a buck these days, but it could work, esp. if your investment is modest. |

Have to agree that Pasta salads are one item that needs to chill to let
flavours develop. The only thing I could think would be to have the shells premixed with the dressings (I'd limit it to three) and just add the veggies and/or proteins to order. Have a creamy mayo base, say on shells, a Garlic/Tomato sauce on rotini, a Pesto on Penne or something like that. Easier to tell apart and the flavour will at least be in the noodles! Rather than made-to-order, why not offer several choices, pre-made? That way, the salad could chill and flavors meld. Have samples to taste-test, of course! My sister likes kitchen-sink pasta salad -- made with cheese tortellini and artichoke hearts and you name it, it's in there. Full of protein and hardly any pasta, actually. I like pasta salad on the plain side -- red onion, green salad olives, roasted red, yellow, orange and green bell peppers, maybe some grated or crumbled cheese, and Italian dressing (but still keep the pasta dry). And, I like the multi-colored corkscrew pasta. You could have a zesty mexican with cheddar, olives, onions, etc., and a seafood with shrimp, crab and celery, etc. You could do a Greek, Italian, vegetarian, etc. Let us know what you do and how it goes. How did you end up doing the made-to-order idea?. It sounds like a great idea! I would buy some if the price was reasonable. How much will you be charging? Karen |

Don't know if you have done the idea already, but stan has a point about the low carb thing. However, IIRC, there are a number of low carb pastas out there.
