May 7, 2004 The pictures are of the soup that I made with the leftover fajitas from lunch the other day. Soup's pretty good. 2 tbsp butter, sizzling raw kernels from one ear fresh corn 4 cups homemade chicken broth leftover fajita fixings, chopped or diced 1/2 cup tomato juice 4 - oz. can chopped roasted green chilies (My can was five years old. . , .) Sauté the corn kernels in the butter and combine with everything else. Simmer a few minutes and serve. Serves 2-4 -- -Barb, www.jamlady.eboard.com updated 3-29-04. |
