Default Help me perfect my Jalapeno Cole Slaw

I'm trying to make a jalapeno coleslaw, so far I have the following
ingredients:

jalapeno
yellow bell pepper
carrots
sugar
cider vinegar
celery seed

For some reason it just doesn't have "it" yet. What should I put
in/take out to make it better?

A lot of times when a recipe doesn't have "it," the answer is a small
amount of plain salt.

Default Help me perfect my Jalapeno Cole Slaw

Add onions (and I'd throw in some green pepper, too), 1/2 t. dry mustard,
and 1/2 C. vegetable oil, 1/2 C. cider vinegar. Place the vegetables in a
bowl, and pour 1 C. sugar over. Do not stir.

Bring to a boil everything but the vegetables and simmer for 5 minutes. Pour
the hot liquid over the vegetables. DO NOT STIR. Refrigerate for a couple of
hours before eating.

This SHOULD be soggy, but for some reason, it's not. Maybe the scientists
among us can explain this.

Shouldn't there be some "cabbage" in your slaw? Or at the very least some
"jicima" or "kholrabi"? Yellow peppers and carrots would add flavour but I
wouldn't build a cole slaw based on those 2 as my main ingredients. Thats
just my opinion...

LOL, I'd have thought so since the name derives from the Dutch kool meaning
cabbage and sla meaning salad; no cabbage in it is like no banana in a
banana split.

Well dude, I don't see any cruciferous vegetables in that mix so I'd opt to add
at least one. Sheldon's suggest of about a year ago of Brussels sprouts
strikes me as good, but regular cabbage, or even shredded broccoli stalks would
balance out the peppers.

Are you wilting the cabbage? I think this is crucial. Shred the cabbage then
mix with the sugar and some salt. Let sit in a colander for 1-3 hours.
You'll see quite a bit of liquid drain off. Then continue with the recipe.

I'm a little confused is there cabbage in the slaw or are you making a
marinated julianne of vegetables?

My brother and his wife took me to a chinese restaurant and ordered a dish
that was almost entirely jalapenos. It was marked as being very hot and
it was. I suspect it wasn't the jalapenos that made it so hot, though.
We couldn't eat half of it, and my SIL had the rest packed up and said
that she would give it to her niece who liked hot foods.

Cabbage would help, since it is the main ingredient in coleslaw.

Oh and besides the cabbage, leave out the sugar. With sweet peppers and
carrots, the salad will be sweeter than would taste good anyway.
