I'm trying to make a jalapeno coleslaw, so far I have the following
ingredients: jalapeno yellow bell pepper carrots sugar cider vinegar celery seed For some reason it just doesn't have "it" yet. What should I put in/take out to make it better? |

A lot of times when a recipe doesn't have "it," the answer is a small

Add onions (and I'd throw in some green pepper, too), 1/2 t. dry mustard,
and 1/2 C. vegetable oil, 1/2 C. cider vinegar. Place the vegetables in a bowl, and pour 1 C. sugar over. Do not stir. Bring to a boil everything but the vegetables and simmer for 5 minutes. Pour the hot liquid over the vegetables. DO NOT STIR. Refrigerate for a couple of hours before eating. This SHOULD be soggy, but for some reason, it's not. Yellow peppers and carrots would add flavour but I wouldn't build a cole slaw based on those 2 as my main ingredients. Thats just my opinion... |

Sheldon's suggest of about a year ago of Brussels sprouts strikes me as good, but regular cabbage, or even shredded broccoli stalks would balance out the peppers. Best, Marc |

I think this is crucial. Shred the cabbage then mix with the sugar and some salt. Let sit in a colander for 1-3 hours. You'll see quite a bit of liquid drain off. I figured that it had to be just like coleslaw but with jalapeno peppers instead of cabbage. I do like somewhat spicy food but not to the point of chomping on straight raw jalapenos. A little Tobasco in a recipe is right for me. With that in mind, I said to myself, well, I'll never make this, but the answer to the op's question must be that he's missing salt.
