Anyone have a good innovative recipe for
beet potato salad? I could search recipe sites for some but would rather get direct recommendations. Of course I will also glance in cookbooks and perhaps recipes web sites, and may ask my chef brother (that last may be the easiest). Or I could improvise one, like borscht so with beet and sour cream and some spice and with lots of potato too. For those on nf.general , I'd love to know a few different traditional Newfoundland recipes espeially since beets and potatos are staple local crops. I also asked about this just now on moderated groups rec.food.recipes and rec.food.veg.cooking (the second more for vegan variants) but since those are moderated my posts there would show up a bit later than this one. Pretty simple.....cook potatoes and mash with some miracle whip. Mash some
beets and add to the potatoes, add a little of the juice to make the colour darker. Add whatever spices you like, I'd only add salt and onion powder. Vinegret 2-3 medium-sized beets, cooked (preferably baked) and diced 4-5 potatoes, cooked and diced 2 salty, not vinegary, cucumbers (pickles), diced 1 onion, finely chopped 1 carrot, diced sunflower oil and vinegar for dressing, or, alternatively, sour cream salt and pepper Mix all ingredients in a bowl, taking care not to break up the diced vegetables. Add oil and a little vinegar to taste. Serve cold. Some recipes call for adding hard-boiled eggs, cold meats or chicken, or finely chopped herring. I prefer the above version, though. Victor |

That's the one I would use - the more beet juice the better.

And that salad request still sounds disgustingly pink to me. I adore beets but yeah, they do "bleed" all over the place.... In Prague years ago I had a "Russky Salat" made with herring, onions, potatoes, and beets with a mayo dressing...it was delish but the pinkish color *was* kinda weird.
