Default Using "Herman" soudough ahead of time

My wife started a Batch of the "Herman" sourdough. She wants to bake a
coffee cake for Easter. However the elapsed time until it's ready for
use won't be up until Easter Day. Can she bake this cake before the
waiting time is up, and if so, how many days ahead of the ready date
can it be done??
