I'm hoping this is a big catch year like last year because the price
will come down quickly if it is.

It's my favorite, can't wait to get some.

Although expensive it (king salmon) sure is the best.

However I've seen salmon labelled "copper river" that was not up to my
expectations. I don't know if the grade varies or (more likely)
there's some fake stuff around.

There is wild caught, true Copper River salmon ....and there are some
that are grown in "pens" at the mouth of the river.

There are also shysters who sell mislabeled fish.

the real thing.

It's also fortunate that it's fairly easy to determine the quality of
the fish by sight. The "real" copper river salmon is noticeably
fatty.

My personal favorite is fresh fried clams. Deep fried in a tempura batter.

IMO, plain and simple is the best way to enjoy most seafood. Love the taste
of it, not the spices added..

Locally farmed manila clams. Some of them were not much bigger than my
thumbnail. I steamed them in some vinho verde with garlic, and finished
them off with cilantro, basil, and lemon zest. The recipe called for
lightly crushed garlic cloves. SO and I agreed they should have been
minced to amp up the garlic vibe.
