I haven't thought about that in so long, it's ridiculous. Carrots get
"peeled" with the back of my knife because the skin can be bitter and
Apples are peeled according to the look I'm going for. Not much else
is peeled, if the skin is edible as is unless the presentation
requires it. For instance, I don't like skin in my mashed potatoes
but skin is a given in "smashed".

I don't stay up at night worrying about it.

I go by the idea that any fruit or vegtable you would normally peel
doesn't have to be organic. Anything you eat the peelng of, should
be organic. I don't peel my apples or potatoes or carrots as a
general rule so I buy organic if possible.

Raw fish is not something I consume except very very rarely as sushi,
so I don't consider it much.

i would still eat sushi even if the risk was greater than it seems to be
because it tastes so damn good. (some varieties seem to fall in the 'get
it while you can' category due to the plummeting of food fish populations
in general.)
