I sliced up raw portabello mushroom, zuchinni, tomatoe, and avocado, then added some (cooked) sliced duck meat left over from Christmas and a little sliced cheese and arranged all that on a plate with a small bowl of ranch dressing in the middle. There are excellent sources on the Net - use Google - and also excellent
books in stores and libraries. A good source of protein on a raw regimen is soaked (to remove the enzymes that prevent sprouting) nuts and seeds. Try soaking fresh almonds overnight, then chop them in a food processor. Add the same ingredients as you would for tuna or chicken salad: onions, celery, bell pepper, parsley, season with plenty of natural sea salt and pepper, unpasteurized cider vinegar and cold-pressed oil. Serve rolled in a lettuce leaf or romaine leaf, or stuffed in a tomato or avocado, or on a raw cracker (made from dehydrated veggies and soaked grains and nuts.) It is a labor-intensive cuisine, by the way. "Erica" wrote in message om...
