Default Sunday lunch 24th July

Having failed miserably to report back on last Saturday's 50th birthday
dinner for a friend, I thought I'd include it here with a report of what's
in the ven at the moment.

In the end, I served smoked fish paté (2 smoked mackerel, around 4 oz of
locally smoked salmon, whizzed in the processor with 300g of cream cheese,
some lemon juice, a dash of horseradish, a grind or two of black pepper and
a bit of chilli powder - simple but good), with home made poppyseed rolls,
followed by roast turkey with all the Christmas trimmings - sage & onion
stuffing, bacon rolls, thick slices of Limerick ham, boiled baby potatoes,
fresh podded peas, baton carrots, bread sauce, turkey giblet gravy and
cranberry sauce on the side (was ideally suited to an Irish summer!),
followed by a dark chocolate fondue with strawberries, rasperries, little
pancakes, marshmallows and cherries to dip, followed by a selection of Irish
cheeses (Milleens, Gubbeen and Cashel Blue) with more poppyseed rolls.
Everyone seemed to enjoy it - and a good evening was had.

For today's lunch (still cooking as I type) I defrosted one of those
organic, seaweed nourished free range chickens I was on about in another
post, and stuffed it with a breadcrumb, lemon zest, lemon juice, tarragon,
garlic and butter mixture. Bunged some more tarragon inside the bird and put
it in a warm oven covered with foil, which I'll remove after an hour or so,
to let the top brown. I'm going to make a lemon/tarragon sauce from the
juices, and serve it with boiled baby new potatoes, fresh podded peas (I'm
growing them) and probably carrots again. Being as it's just the DH and
myself for lunch, I shan't bother with starters or puds.

Next weekend (I think, still waiting on confirmation from the guests) it's
the long-awaited Chinese feast - I'll let you know how it goes!
