You asked for it.

German Onion Pie

4 thick slices of bacon, diced (I used german smoked or 'double smoked
bacon' as they call it)
2 cups peeled and chopped yellow onion (I used half yellow and half red
onion)
2 eggs, beaten
1 cup sour cream
1 tblsp flour
1/2 tsp salt
1/4 tsp fresh ground black pepper
1 9-inch pie shell, unbaked

Preheat oven to 400 degrees f

Saute bacon. Drain most of the fat from the pan. Add the onions and saute
until clear. Do not brown. Set aside to cool.

Beat the eggs and sour cream together in a medium-sized bowl. Sprinkle the
flour over the top and beat it in. Stir in the salt and pepper.

Prick the bottom of the pie shell several times with a fork. Spread the
onions and bacon over the bottom of the pie shell. Pour the sour cream
mixture over the top.

Bake for 15 minutes. Reduce heat to 350 degrees f and bake for another 15
minutes or until pie is nicely browned. Serve hot!

Modification:
Add a layer of grated asiago cheese between the onion/bacon and egg layer.

Here is a Swiss version for you Jack. Got it from a Swiss pal many years
ago. The German bacon goes well here too.

EVA'S SWISS ONION PIE

Source: Eva, a Swiss friend and cow-orker


1. Cut up 1/2 lb. bacon and fry until limp.

2. Cut 2 lbs. onions into strips and fry with bacon.

3. Add 2 to 4 tbs. flour.

4. Mix 1/2 litre milk or cream (or a little less), pinch salt, 1 tsp.
caraway seeds, 2 to 4 eggs and pour into onion mix.

5. Bake in piecrust.

I had a pie shell hiding in the freezer so I made this tonight as a
side for the prime rib. I used a few extra onions, really smokey
bacon, and since I was shy on the sour cream by about 1/3rd of cup, I
also added about 4.5 oz's of a sharp provalone. And a touch of
nutmeg.

It sucked!

Just kidding, it was pretty darn good. I used some really smokey
bacon (probably about 6ozes). Together with the (white) onions and
the sharp provalone... Burp!
