Modification: Add a layer of grated asiago cheese between the onion/bacon and egg layer. |

Charlie EVA'S SWISS ONION PIE Source: Eva, a Swiss friend and cow-orker 1. Cut up 1/2 lb. bacon and fry until limp. 2. Cut 2 lbs. onions into strips and fry with bacon. 3. Add 2 to 4 tbs. flour. 4. Mix 1/2 litre milk or cream (or a little less), pinch salt, 1 tsp. caraway seeds, 2 to 4 eggs and pour into onion mix. 5. Bake in piecrust. |

I had a pie shell hiding in the freezer so I made this tonight as a
side for the prime rib. I used a few extra onions, really smokey bacon, and since I was shy on the sour cream by about 1/3rd of cup, I also added about 4.5 oz's of a sharp provalone. And a touch of nutmeg. It sucked! Just kidding, it was pretty darn good. I used some really smokey bacon (probably about 6ozes). Together with the (white) onions and the sharp provalone... Burp!
