Each year through the Christmas season I take homemade goodies in to share
with colleagues at work. Actually, I take homemade goodies in all year, but more often at Christmas time g. Today I took in the first lot of the season. Had not made this recipe before, but it went down very well - many compliments and no biccies left - so I think I'll keep it for future use. Found the recipe in a recent issue of Super Food Ideas magazine, where it was a McCormicks (spice company) promotional piece. Used Christmas cutters - stars, Christmas trees, holly leaves Cinnamon Sugar Biscuits Makes 36 (will depend on size of cutter) Note - 250ml cup, 20ml (4 teaspoon) tablespoon 125g butter, softened 1/2 cup brown sugar 1 egg 2 tablespoons treale or golden syrup 1+3/4 cups plain flour, sifted 1/2 cup self raising flour, sifted (note Aussie SR flour contains no salt - you can substitute 1/2 cup plain flour plus 1 teaspoon baking powder) 2 teaspoons ground cinnamon 1/2 teaspoon bicarbonate of soda (baking soda) 1 extra egg white, 1 extra teaspoon ground cinnamon, 1 tablespoon caster sugar (superfine sugar) Cream butter and sugar until pale. Add 1 egg and treacle/syrup. Beat well. Add flours, 2 teaspoons of cinnamon and soda. Mix well. Knead on a floured surface. Divide mixture into 2. Press each half into a 10cm disc. Wrap in baking paper. Refrigerate for 30 minutes. Preheat oven to 180C. Line 2 baking trays with baking paper. Combine caster sugar and extra teaspoon cinnamon. Roll dough out to 5mm thick. Cut out biscuits. Place onto trays. Brush biscuits with egg white. Sprinkle with cinnamon sugar. Bake for 10 to 12 minutes, or until golden. Cool on trays for 5 minutes.
