Default Ordered a hind 1/4 of beef yesterday.

I figured that the price would be outrageous. Granted, it was a bit
high but I didn't think that it was brutal. Considering the quality of
meat our local butcher shop gets, he cuts it to order, vacuum packs it
to order and then quick freezes it. I didn't think that $3.00/lb was
as ridiculous as I expected given the horror stories that I've heard
about.

That's not bad, Steve. It's about a buck or more a pound if you bring your
own into mister metzger, so I'd say you did ok, by my local accounts. And
you didn't hafta raise it yourself and all that.

one of the owners named Anthony. He's there most every day except=20
Monday and Friday.

Metzgers?? They used to be around here. Actually, they're from here=20
but they've gone out of business in this area I'm surprised that they=20
are in yours! I used to by Metzgers all the time. Assuming that we're=20
taking about the Metzgers that have the farm just off of the Taconic=20
Parkway...

But yeah, I was kinda surprised. GOOD meat too.

If yer takin' the 1/4 to your freezer at home, Steve, make sure you
ration your usage. Anytime I'd bought a hind quarter, I would
rationalize that its cheaper for me to broil a steak for a snack than
it is to go out and buy some bologna. Wasn't long...all the steaks
were gone! lol

lol, I know what ya mean Trent. But we keep chicken, turkeys, fish,=20
and a 1/2 of pork in there too so there's choices when Nanc takes out=20
whatever I'm gonna make for dinner. She takes it out, I cook it.
Plus the pasta, sandwiches, etc, etc, etc. We switch up alot. (with=20
the food people, get your minds outta the gutter ;-) )

$3.00 per lb. is actually pretty reasonable for vacuum pack! :-)

I paid a bit over $2.00 per lb. once for a whole "range veal". Got about
200 lbs. of meat double wrapped in butcher paper for $500.00.

It was a weanling brangus range calf. Oh GODS was it delicious!
Guilt free too as it was not a true "veal".

I plan to do it again as soon as I have the cash, and the freezer space....

Yeah, that's only a couple of hours away from here.

haha, I used 'metzger' in the generic, as it's German for 'butcher'.

That's good to hear and I think we'll be seeing more of that soon, as the
state of mass market meat is becoming dismal. I was in a MalWart
supermarket the other day (first one in this area) and saw no package of
meat that didn't feature an ingredients list. That's scary.

We've got a 20 cu. ft. freezer and no problem holding a 1/4 of beef, 1/2
a pig, turkeys, chicken, and fish. Then I put frozen veggies, home made
stocks, etc in there to fill in. We like to keep is as full as possible.
Efficiency and all that... ;-)

grass-fed beef and a half a grass-fed lamb as soon as I buy the freezer. Any
advice on the size of that freezer would be most helpful!

I thought that I posted a reply to this earlier but may be losing my
mind... things are rather going crazy here lately.

There's only 2 of us but we have a 20 cubic foot freezer. I bought one
that large because I wanted to be able to have a 1/4 of beef, 1/2 of
pig, chickens, turkeys, and fish plus room for homemade stocks, veggies,
etc.

What size you need really depends on how you plan on stocking it and how
many are in the household.

How does how many are in a household alter how much freezer space is needed to
hold a particular quantity of anything.. are you implying that the household
inhabitants will be residing inside the freezer too?

A dressed hind quarter doesn't require all that large a freezer, depends a lot
on how it is cut and wraped but a 12cuft freezer should accomodate the
approximately 150lbs of beef.

Didn't mean to imply that at all but given that there are only two of
us our freezer holds MORE than enough. However when I was younger and
there was Mom and Dad along with 5 kids we needed more storage. If we
had 7 people with the freezer we'd constantly filling it.

My Dad always bought a 1/2 of beef and other stuff. Plus we made 50
gallons of saurkraut every year that needed frozen. Plus venison. Plus
pheasants, plus froglegs, plus ... etc... Trust me, my Dad had a
*big* freezer. I don't know how many cubic feet it was but that sucker
was big.

I agree with your freezer accomodation btw. That's why we got a 20. We
wanted more room to hold a variety of things.
