Default Oyster stuffing for Turkey

Okay... I DO have to work Thanksgiving day, and am not sure what the
Sister and Brother in law are planning, (will talk to them later but I
know that Chas has to work too), but I DO know that Chas has a
fondness for an Oyster stuffing??? Never tried it, have no recipe.

Has that been discussed here so should I just google it? I'd like to
make it for them, the Nephew is a handfull at this stage, (16 months
G) so I want to take the entire burden of cooking off her hands for
this holiday season, even with my job. :-) Will try to talk her into
doing Thanksgiving on Saturday.

So, anyhoo, anyone have a recipe for Oyster stuffing that is mild and
light, preferably without bread???

I will also try to talk the cooks at work out of their apple and
cornbread stuffing recipe. _Gods_ that stuff is good! I plan to do 2
small turkeys. One for sis and Chas and one for me and dad. :-)

That way we each get our own leftovers. G

This, from Emeril on FoodTV. I don't think you should leave out bread,
given the richness of oyster. I would not use cornbread stuffing. I have
made oyster stuffing a number of times, and it is always a hit. This
looks like a good recipe.

Very basic - use as a starting point

3 pts. oysters
3/4 c. butter or margarine
1 1/2 c. chopped celery
1 1/2 c. chopped onions
12 c. dry bread cubes
3 tbsp. chopped parsley
3 tsp. salt
1/2 tsp. poultry seasoning
1/4 tsp. black pepper

Drain oysters, reserving the liquid, chop. Melt butter in skillet. Add
celery and onion and cook until tender but not browned. Combine oyster,
celery, onion, bread cubes, parsley, salt, poultry seasoning and pepper and
mix well. Moisten stuffing with oyster liquid if necessary. Makes enough
stuffing for 10 to 15 pounds turkey. NOTE: Stuffing may be baked in
lightly greased casserole at 325 degrees for 45 minutes to 1 hour or until
heated through. Yield: 10 cups.

One mo


4 qts. toasted bread crumbs (about 32 slices)
1/2 c. butter or oleo
1 c. chopped celery
1 1/2 c. onion
1/2 c. milk
2 tsp. salt
1/8 tsp. pepper
1 tsp. powdered sage
1/2 c. butter
1 qt. oysters with liquid or 4 cans frozen oysters, thawed

Put bread crumbs in a large bowl. Melt 1/2 cup butter in a skillet, add
celery and onions and cook until soft. Pour over crumbs. Heat 1/2 cup
butter and add oysters and liquid. Heat until edges of oysters curl. Chop
oysters if you want. Pour over bread mixture. Add milk, sage, salt and
pepper. Mix well. I add about 1/2 teaspoon baking powder to this sometimes
to keep it from being soggy. This will stuff a 16 to 18 pound turkey.

The "without bread" part throws me completely. I like oyster stuffing and
have tried several variations but all include bread of some type or another
as an essential ingredient (fresh bread crumbs, dried bread cubes, cornbread
etc). You could make some type of mousseline with oysters but that would
hardly go well with turkey ;-). I've done something of the sort with whole
fish stuffed with a salmon and oyster mousseline. If the "without bread"
requirement is some kind of low carb thing any other replacement for the
bread, such as various grains, wouldn't help either. My sister and
bro-in-law are doing the Atkins diet and I am very glad they aren't joining
us this year for Thanksgiving for just this reason ;-). Maybe some of the
Atkins people can help you out. Otherwise, if you can live with bread in
your stuffing, I have a couple recipes. E-mail me if you want them.

yes, I am indeed trying to stick to fairly low carb cooking, even over
the holidays...

I DO have some low-carb bread bake mix and am considering making some
of that up and drying it for the bread content of dressing, but I'll
most likely use a corn bread base as, not only does that go well with
Oyster flavor, but corn meal is just not the same as wheat. It's oh so
much higher in fiber, so I don't worry about it as much. :-)

I also have the complication of being sensitive to wheat proteins.
They make me ill.

well!

Actually, no he did not...
I mis-read it is all and missed the bread part, my bad! :-)

I'm on broadband now! Yay! :-)
