Louise has a secret garden that she got gallons of blackberries from 2
years ago. Last year was so dry there was zip. This year will be
better with all the rain in the midwest. There will be plenty. I
don't know crap about canning, but I freeze things very well.

I received a gift and a card. Flowers from my niece. And phone calls
from my kids and the BRG and cards from others. A Czechoslovak cookbook
from one net friend and a gift from another net friend. I didn't suffer.
(Apple's iWork suite of apps that compares to MS Office. I'm trying to
put more distance between me and Bill.)

Happy B'Day Menu

Sweet-and-Sour Shark

Bon App�tit | June 1990

3 tablespoons sugar
3 tablespoons distilled white vinegar
2 tablespoons soy sauce
1 tablespoon tomato sauce
1 teaspoon salt
1/4 cup dry white wine
3 tablespoons cornstarch
3 tablespoons all purpose flour
2 5-ounce 1/2-inch-thick shark steaks
Vegetable oil for deep frying
1/2 cup drained canned sliced bamboo shoots
1/2 cup sliced mushrooms
1/4 cup grated carrot
1/4 cup frozen peas, thawed, drained
2 teaspoons minced peeled fresh ginger
2 teaspoons minced garlic
Salt and pepper
1 tablespoon cornstarch diluted in 1/2 cup water

Combine first 5 ingredients in small bowl. Set aside. Combine wine,
3 tablespoons cornstarch and flour in medium bowl. Add fish to flour
and turn to coat.

Pickled Beets and Eggs

Bon App�tit | August 1994

1 16-ounce can sliced beets, drained, liquid reserved
1/2 cup sugar
1/2 cup cider vinegar
6 whole black peppercorns
6 whole allspice berries
6 hard-boiled eggs, shelled
1 small onion, sliced

Combine reserved beet liquid, sugar, vinegar, peppercorns and allspice
in medium nonaluminum saucepan. Bring to boil over medium heat,
stirring until sugar dissolves; remove from heat. Add eggs and onion
and turn to coat completely. Add beets. Cover pan and refrigerate
until eggs are deep pink color, turning occasionally, about 8 hours.
(Can be prepared 2 days ahead.)
Drain juices. Cut eggs lengthwise in half. Arrange beets and onion on
plate. Top with eggs and serve.
