Default What to have with home fries?

I'd love to make some home fries in the morning with onion and green
pepper perhaps, and am thinking about adding cubes of cooked ham to it
I guess.

Was wondering what else you might add? I could probably scramble some
eggs, then combine with the home fries and add cheese over it all.

Make a Spanish omelet aka a potato omelet.

This method is a little different than I use, but the result is close
enough. I usually blanch the potatoes first and then fry and not in
olive oil. I like to get the potatoes almost crispy and I drain them on
paper towels and start with a fresh clean pan to make the omelet.

I also like it to be more about the potato than the egg - so I would use
fewer eggs.

This was a very common Sunday morning breakfast in my family for a long
time...but we eat fewer potatoes these days.

Bleaugh! Do not make dog food out of perfectly nice American breakfast
food. Separate, lift and separate.

Nah, let it combine in your stomach, stay separate on the plate: eggs
any style, home fries on the side with a spoonful of pico de gallo
over them, toast, o.j. Save the cheese for lunch. Quantity doesn't
have to be huge--this is your kitchen, not one of those diners that
sell 5 lb. breakfasts. This morning I had singles: one egg over
easy, one mashed potato patty, one piece of toast, one glass of o.j.,
one cup of coffee. More than enough to fuel an active day. -aem

The reason I mentioned putting the eggs in with the home fries and
cheese over top is because my 1 yr old doesn't seem to like eggs by
themselves.

Besides, sometimes everything separate on the plate is boring and
dull. I like my veggies in with my mashed potatoes. My meat in with my
pasta. I love things mixed together so you can taste all the various
flavors almost at once.

We used to have a "Country Kitchen" restaurant around here - our
favorite 2 a.m. (after the bars closed) "meal" was one of their
specialities: there were American fries on the bottom (of an oval-
shaped deep dish), then an omelet, with the whole thing covered with
melted cheese. The fries had sauteed onion & green pepper, and the
omelet had generous seasonings (garlic, pepper & parsley) and ham.
Yum.
