Default Buttermilk pancake tips :))

I finally got my buttermilk pancakes down. I stopped microwaving it (to bring it to room temperature). I think this interfers with the reaction between the buttermilk and baking soda. Also, I made sure I mixed all my wet and dry ingredients separately before combining them. Once I mixed the egg with the dry ingredients first and they tasted eggy. I used the Williams Sonoma recipe:

I'm kind of partial to Alton Brown's 'instant' pancakes recipe. Probably the
best I've tasted.

I make 4 or 5X the dry ingredients then mix and put in ziplock baggies to
use as needed. Excellent for camping trips.

That is an interesting way to do it, but I have to wonder about the advantage
of premixing the dry ingredients when it is just a matter of measuring out a
little flour , baking soda, baking powder, salt and sugar. I also wonder about
using it 2 cups at a time. I find my recipe with one cup ample for pancakes for
2-3 people. And then there is that whole stick up butter for cooking up a bunch.

I've begun to suspect AB has a lotta stock in Rubbermaid or some other
plastic container company. Notice how they're always filled less than half
full? If one followed all his recommendations, they'd hafta build an
addition on the house for storing all those storage containers.

Also, what's with the beaten egg whites? If you make your pancakes with
good baking powder and buttermilk, they'll be just about as airy as can
be, short of a meringue or souffle.

He must have more storage space in his kitchen than I have. I already have
canisters for flour and sugar, an a supply of salt and baking soda and powder. If I
made that mix I would then have to get another container for the mix and find room
in the cupboard for it. It seems a bit redundant. It might be handy for a camping
trip, though you would then have to take along a supply of milk, eggs and the
beaters.

Indeed, an unnecessary step for pancakes. It is a good thing to do when making
waffles, but a waster of time for pancakes.

I recall that on one show episode they showed that he has an entire test
kitchen down in his basement. Perhaps all those containers "belong" to
that kitchen (rather than the family home kitchen upstairs)?
