I will only eat it cold at the center. I prefer it charred on the outside,
but will give that up to have the real red middle.
My little dive here cuts the meat as yoiu order-- there are several loins to
choose from at different sizes and breeds. They insist it must be at least
..75 kilo. They use a rosemary branch to brush oil over it, then grill it in
a scissors grill over coals pulled out of the pizza oven. You can hear it
when it goes over those superheated coals. It is very good steak.

Not very, as the cool center starts to cool the meat quickly. Since Italian
meat is low fat it doesn't make that much difference.

I love Tuna, Salmon, Halibut, and especially Shark steak.

What kinda meat you talkin about... probably old guinea goat.

Depends on the cut.
Porterhouse, Rib Eye: medium.
Filet: Medium Rare-though I rarely eat it as it is not as tasty as a T Bone.
