Fork Cookies



INGREDIENTS

1 Cup butter or margarine, melted 1 Teaspoon baking powder
1 Cup granulated sugar 1 Teaspoon baking soda
1 Cup brown sugar 1 Teaspoon cinnamon
2 Eggs 2 Cups quick-cooking oats
2 Cups flour ½ Cup coconut
½ Teaspoon salt

Variation: Add 1 cup of chocolate chips or 1 cup of raisins.

Yield: 5 dozen cookies

INSTRUCTIONS

Melt butter; add sugars and eggs.

Sift together flour, salt, baking powder, baking soda and cinnamon.
Stir into sugar mixture until well blended. Stir in oats and
coconut. If desired add chocolate chips or raisins.

Roll into small balls. Place balls on a greased cookie sheet and
press the dough down with a fork.

Bake in a 350º oven for 8 to 10 minutes or until done.
