Jill Me, I'd dredge them in flour (seasoned with salt & a good amount of fresh pepper, plus a little paprika), then brown. Add some very thinly sliced onion or shallots, some beef stock, and simmer until the meat is tender and the gravy is thickened. It's simple, but delicious, especially with a smashed tater or two. kimberly |

Okay, I did CFS last week. *I've got some cube steaks. *Not sure what to do with them. *Suggestions? I used cube steak for some rockin' chicken fried steak. Made a wonderful country gravy with the pan "drippings" and served that over the steak and mashed potatoes. Ummmm-Ummm good. The breading would vary from simply seasoned flour to crushed crackers. Mine wasn't batter dipped (other than the egg and milk before rolling dredging the meat in the breading mixture). Alas, I gave up frying things several years ago -- but my kids still love requesting it when I visit. --Lin |

Jill Back in the day when I was newly married and we were trying to be budget-conscious, I would put them in a shallow pan, season them, and pour mushroom soup over them and bake in the oven at 350 for about a half hour. They were pretty tasty. You could do the same type of thing using a red wine/mushroom sauce. ;-) Yum. N. |
