I love veggies, I really do, but salad requires dressing, and a
squirt of lemon juice just doesn't turn my crank. So I've gone in search of a fat-free (or very-low-fat) vegan dressing, and I've been making some progress. I'll be trying more, but here are three that I like, with my favorite-so-far first, and others following. I'll spare you the ones I thought were really yucky. 1) Creamy "Caesar" dressing My favorite one was based on the one at http://www.fatfreevegan.com/dressing...s_caesar.shtml I did make a few changes, based on what I had in the house and my own tastes. The recipe calls for 2/3 cup of silken tofu, which is about half a 12-oz. package, so I just made a double batch. I'm glad I did. I also skipped the water in the original recipe, because I like my dressings kind of thickish. Here's what I used: 12 oz. package medium-firm OR firm SILKEN tofu 1/4 c. fresh lemon juice 1/4 c. white vinegar 1/4 c. light miso 2 Tablespoons brown mustard 1 teaspoon granulated garlic 1 teaspoon each salt and pepper 4 dashes Louisiana hot sauce (I use Frank's RedHot) 1/2 tsp. soy sauce Blend 'til smooth. 2) Honey-mustard 1 part honey or honey substitute 1 part mustard 2 parts water 2 parts vinegar Whisk together. 3) Roasted Garlic Vinaigrette 2 T mashed roasted garlic 2 T balsamic vinegar 2 T mustard, any kind 1/4 cup water, or as much as you need for the consistency you like salt and pepper to taste (optional -- I usually leave it out) Mix it all together and pour it on salad. :-) |
