This is one of the dishes I made for the SD cook-in. Unfortunately I burned
it and ended up not bringing it. We had so much food that it wasn't missed.
It is one of my favorites and I've made it for many years. Don't know why I
messed up this time. sigh

BAMIES MEH DOMATES
Greek okra with tomatoes

Recipe by: Charlie

1 lb. fresh okra or 1 lb. frozen *whole* okra
1 tsp. wine vinegar
1/2 tsp. salt
water to cover
1 tbs. olive oil (or butter)
1 cup chopped leeks, onion or scallions
1 cup tomatoes (fresh or canned)
1 cup water (reduce slightly if using canned tomatoes or have extra juicy
tomatoes)
juice from one lemon
1 bay leaf (Turkish)
salt and pepper to taste


Cut any stems off okra - do not cut into the pod. Cover with water and add
vinegar and salt. Let stand 15 minutes; drain. Heat oil, add leeks and cook
for 5 minutes. Add remaining ingredients, cover and reduce heat to medium.
Cook 25 minutes. I like to serve this with crusty bread or couscous.
