Default She Devil Crab Soup

I have a friend who has been to the Carolinas and raved about "She
Devil Crab Soup". I tried to locate a recipe for it, but a Google
search only sent me to one site, which said the recipe could no longer
be located.

Would any of you have the recipe? It would be in the Carolina Low
Country category.

Is she positive about "Devil" part of the name? I've heard of/had She Crab
Soup before, but not SDCS

The recipe certainly sounds similar to what she describes. My friend
is a "she-devil" - perhaps she was only projecting;-)

The roe is what makes the soup. It won't destroy it if you leave it out,
though. In fact, I'm not sure most of the restaurants in the Lowcountry
actually use it anymore. Finding she-crabs with roe is costly.

I posted this back in 2003. The recipe is from a Mrs. Sam Stafford of
Beaufort, SC, as published in 'Sea Island Seasons' (a Lowcountry cookbook)
around 1989.

She-Crab Soup

2 Tbs. butter
2 Tbs. flour
1 quart whole milk
2 cups she-crabmeat plus roe
Worcestershire sauce to taste
salt, to taste
1/2 tsp. pepper
1/2 tsp. mace
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/3 c. sherry or more to taste
1 c. cream, whipped
Parsley to garnish

Melt butter in a double boiler and blend with flour until smooth. Add milk
and whisk until smooth. Add crab, roe, Worcestershire sauce (about a tsp),
salt, pepper, mace, onion & garlic powder. Cook over very low heat about 30
minutes. Add sherry. Remove from heat and blend in whipped cream just
before serving. Garnish with a little parsley. Serves 4-6

I would absolutely agree with you, Jill. I'm jealous that you're in
she-crab soup country right now, though. :~)

LOL don't be! It's still too early for crabbing (not that I'd be doing any,
although I have in the past), much less trying to find she-crabs. Besides,
picking blue-crab meat outta the shells is more trouble than its worth!

The price at 11th Street Dockside (in Port Royal) for she-crab soup isn't
too bad, $6.95 for a bowl, and it's really tasty:

To clarify: there is a soup called she-crab soup in the south, as
others have posted.

Devilled crab is a separate item, consisting of crabmeat that has been
removed from the shell, mixed with seasoning, and and put into a
tinfoil crabshell-shaped dish and baked. (Kinda like stuffed tinfoil-
crab.) Deveilled crab is also the stuffing used for stuffed shrimp or
stuffed flounder. Perhaps she blended the two names?

Instead of using the real crab roe, it's possible to substitute
'strained' egg yolks from hard boiled eggs, but don't use the
egg-whites. IOW, take the cooked egg yolk from a hard boiled egg and
push/scrape the cooked yolk through a fine strainer/sieve (or is that
seive?). That's what my family used to do when making she-crab soup.
