2 pkgs. (10 oz. each) frozen Fordhook lima beans
2 slices bacon, diced 1 c. chopped onion 1/2 c. chopped celery 1-1/2 c. shredded Monterey Jack cheese 1/4 tsp. pepper Dash Worcestershire sauce Cook the lima beans in 1-1/2 c. boiling salted water for 15 minutes. Drain and reserve 1/2 cup of cooking liquid. In a skillet, fry diced bacon until about half cooked. With a slotted spoon, remove bacon to paper towels to drain. Reserve 3 Tbs. bacon fat. Coon onion and celery together in bacon fat until softened. Toss together lima beans, onion, celery, cheese, pepper, Worcestershire and cooking liquid. Turn into a lightly greased 2 quart casserole. Sprinkle the bacon on the top. Bake uncovered at 350F degrees about 25 minutes. Jill |
