Hey Everyone,
I'm not new to this group but this is the firt time I've ever posted so bear with me here. I have wanted to learn to cook for a long time and know a few dishes to keep me from starving to death. But now I want to spread my wings a bit and dive into this a little further. What are some things that I need to have in my kitchen (food, utensils, ingredients..etc ) for a basic functional kitchen. In other word, what are some of the things that I need basically all the time. I don't have time for a college class on cooking. I'm reading "Cooking for Dummies" which is a big help. And have another cookbook with basic recipes which also helps. Any help that any one could give would be greatly appreciated. Thanks, Cash |

I have a very small kitchen, so I tend to have only the basics in there. I have a selection of herbs and spices, plus a toaster oven, microwave oven, and the usual staples, such as Heinz Ketchup, Heinz Ketchup, and Heinz Ketchup, along with two or three pots and pans, a few dishes, glasses, utensils, some knives, and Heinz Ketchup. |

Pretty much everything Stan said, including the ketchup. :-) Might I suggest not "scrimping" on the cookware? I'm not talking about blowing a paycheck or two on cookware, but something "decent." You will find yourself ruining a lot of good food with the cheap, thin crap that is out there -- not to mention you will be replacing that same cookware in a very short amount of time. I think a good start would be a 10"-12" frying skillet (either stainless steel or a good heavy non-stick) a couple of sauce pans, a small omelet type skillet and perhaps a stock pot. With lids, preferably. You could just buy open stock as your budget allows or go for a set. Somebody recently mentioned a great deal on a stainless set. Shop around. You could also peruse the local thrift stores or garage sales. I've gotten some incredible buys at garage and yard sales. Don't forget bakeware! You might even hint that you need things for your kitchen as holiday gifts. There was also another thread recently from Alexander, moving out for the first time and wanted suggestions on stocking his kitchen and a food budget. As for pots and pans a sauce pan 2qt to 4qt with a lid, frying pan 10" to 12" and perhaps a 5 qt Dutch oven to start. Two knives a chef's/santoku in a comfortable length and a paring knife about 3.5". Later you will want to add a slicer/bread knife and a 5" to 6" utility knife of some type. You will also need a simple peeler, can opener, measuring cup and spoons. There are many more items that you will add as you go along but equipment will depend on the foods you cook and methods you use. I recommend you don't buy until you have a need to buy when it comes to equipment. Spices can be as simple as just salt and pepper to 50 different kinds. The rest get as needed to do the recipes that sound good to you. For recipes the Food Network web site is good as well as watching some of the more basic shows. Your local PBS station is also a good source for basic cooking shows. Go to a book store and look through the cook books available. Pick one to start that you can follow understanding the instructions for preparing what ever dishes they offer. Also pick one that has food you will want to eat other wise you are wasting your money. Start simple with a new recipe each day, every couple of days or just on the weekends. Make a list of what you will need based on the recipe at the moment then go shopping. In other To answer, we kinda need to know what foods you like best. For example, if asian cookery, a wok is a good idea but if western cooking, a waste of cabinet space. Basics: frying pan with a lid, 10-12 inch. Advanced: extra one, 6 inch or so with lid Basics: lidded sauce pan that holds at least 3 cups liquid lidded pasta pot (something to hold 2 quarts or near it) medium: second sauce pan, smaller Basics: 1 or 2 9 inch cake pans (8 inch ok too) Medium: a loaf pan so you can make meatloaf etc without having them shaped like a cakepan. Basic: round pizza pan, used also for any breads or cookies or rolls. Be sure it's a big one as you can always cook a small pizza on the big one biut the reverse doesnt work basic: 1 cassarole dish with lid. The medium sized one is most useful. Forget most of the fancy utensils. a serrated long knife, a smaller sharp one, and some steak knives will do for basic knives. Do get one of the rubber/plastic sets of slotted spoons and frying pan flipper sorts as you'll use them alot. To say more, have to know what you plan to cook and what you like. Such as for me, calrose rice and a ricemaker are basic essentials. That probably doenst match you though. Doubt you just came from 6.5 years in Japan grin |

Thanks, Cash There are a ton of things in my kitchen all types of pots and pans knives, tools and spices. However when I go camping I only take a small cooking kit and I am able to make just about anything from it. For this reason I would think that you should be able to get away with the following items. Chefs Knife Paring Knife Cutting Board Kitchen Towels Large Pot with lid and thick bottom Small Pot Pan Wooden Spoon Rubber Spatula Forks Spoons Plates Large Bowl Foil and Plastic Wrap Personally I love to have spices and all types of flavorings in my kitchen but it is very important that you are comfortable with the flavors that you have before you branch our or there is a very good chance that they will go bad before you have a chance to use them. For this reason you should probably start with a set of spices that matches the type of food that you want to start cooking first. Here are some example spice sets European - bay, thyme, oregano, basil, salt, black pepper, red or white wine vinegar. Asian Southern - ginger, white pepper, coriander, basil, chilis, turmeric, star anise, coconut milk, kafir lime leaves, Other than your basic tools, flavorings and raw products you need time as great cooking takes time to master but it is well worth the effort and the few bad tasting dishes and you will make along the way. -- www.p30.com |
