Default Coriander recipe

Hi there.
I have come accross a great coriander recipe (in one of my herb garden
books) if anyone wants to give it a go.

Ingredients: 1 medium sized chopped onion, 2 handfulls of chicken
pieces, chopped bunch of coriander (the more the better), a can of
coconut milk, salt, pepper.

Stir fry all of the ingredients, onion first. When chicken cooked, use
with pasta or rice. It is delicious.
Have made it a few times now. Was just wondering if anyone else has
some coriander recipes besides salsa, as I have loads of corriander in
the garden.

Creamy Garlic Prawns


This recipe is "to die for". Prawns sautéed in fresh garlic and
coriander cream sauce. Simple to make. Remember to use lite cream and
only half the salt content for a healthier alternative.

500 g green prawns
1 tablespoon butter
1 tablespoon lemon juice
1/2 cup cream
4 garlic cloves
1 tablespoon fresh coriander
1/2 teaspoon salt
1 teaspoon black pepper
2 teaspoons olive oil


1. Peel and devein prawns leaving tails on.
2. In a small bowl combine lemon juice, crushed garlic, salt and
pepper.
3. In a heavy based skillet, melt butter and olive oil on a medium
heat.
4. Once butter has melted add prawns and garlic mixture and increase
heat to ensure prawns are cooked quickly.
5. Toss prawns and mixture for 1-2 minutes or until prawns turn pink.
6. Add coriander and toss for a further 30 seconds.
7. Reduce heat. Add cream and stir through.


Instead of having with rice, I tossed through some fettucine.

Just try it sometime. It is really, really good. And like Greg
said..a classic combo in Southeast Asia cuisines. And they have some
fine food.

Eve...consider that insipid "chili" receipt you just posted.

I'd be more a - scared to have dinner at yer place than I would be going to

It is a popular combination in Thai and Vietnamese recipes. The recipe
may call it Cilantro instead of Coriander.

I have a recipe similar to that and it is terrific, except that mine calls
for curry paste. Season chicken with salt and pepper. Heat a bit of oil in
a pan and add some curry paste, stir it around then add chopped onion and
cook until they start to soften. Add the chicken (strips) and when they are
almost done add some sliced red peppers. Add coconut milk, lemon juice and
fish sauce cook and stir until the sauce thickens a bit. Just before
serving add chopped cilantro.


BTW.... since it says a chopped bunch it would likely be cilantro the herb
rather than coriander the spice.

Thank you, Becca. There lies the problem--I am one of those people
to whom Cilantro/Coriander tastes terrible. So I guess it is not the
combination--the thought of that spice alone is repulsive to me.

There are definitely differences in the way taste buds work. That, and I
think
my associating cilantro with mexican flavors is what grossed me out thinking
about it mixed with coconut milk.


Cilantro is also a major ingredient in many middle eastern cuisines,
as well as southeast Asian ones.

In some countries we call the herb "coriander" and the spice "coriander
seed".
