Are you using a bread flour? You need a good bread flour not all
purpose flour to make pizza dough. There is not enough gluten in all purpose flours. I make my pizza dough in a bread machine. Here is a great recipe for one. PIZZA DOUGH 1 1/3 cup water 2 teaspoons sugar 1 1/4 teaspoons salt 2 tablespoons olive oil 2 tablespoons cornmeal 2 cups unbleached all purpose flour 1 cup bread flour 1 teaspoon baking powder 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 3/8 teaspoon MSG 1 1/2 teaspoons yeast (You may use all-purpose flour only for this recipe) Bread machine: Add ingredients to machine bread pan in order given or as per manufacturer's instructions. Set to 'dough' mode. Remove dough once through cycle and let rest 15 minutes. Spread a bit of corn meal on the working surface and roll dough out to the size you want. ------------------------------------------------------------------------------- Darlene wrote: I'd like to make dough at home that's stretchy the way chilled bagged dough at the supermarket tends to be. Moron. Ahahahahahahahahahahaha. And MSG. The mark of an incompetent slob in the kitchen. What a no IQ statement. MSG is contained naturally in most foods, especially tomato... so it wouldn't make sense adding MSG to pizza sauce, especialy not 3/8 tsp... that's enough for a 16 qt pot of chow mein. There are an awful lot of Asian cooks that use MSG, I don't think many are incompetant slobs... but I do know with absolute certainty that you should be barred from kitchens world wide, you know noting about cooking, in fact you know nothing about anything... all you do is blurt out insane meanderings, you truly need to be committed to a secure sanitarium. Special tip of the day: Next time yoose cook a pound of pasta add 1/2 tsp of MSG to your normal six qts of salted cooking water... learn that pasta actually has flavor... so it might make sense adding a small pinch of MSG to pizza dough. Pizza dough consists of flour, water, yeast, salt and olive oil. Period.

Any cook who adds MSG deserves to be waterboarded. Put our retired CIA interrogators to good use. There are an awful lot of Asian cooks that use MSG, I don't think many are incompetant slobs... They most certainly ARE incompetent, because I said so, and as I explained earlier, there is no debating the issue. |
