You've never seen a chocolate covered frozen banana? Or dried (processed)
banana chips?

I got all these except for:

3. Of all vegetables, only two can live to produce on their own for
several growing seasons. All other vegetables must be replanted every
year.
What are the only two perennial vegetables?

I only got asparagus of the two.

8. Name the only vegetable or fruit that is never sold frozen, canned,
processed, cooked, or in any other form except fresh.

This one is wrong. Check V8.

I really think V8 was canned. ....or do you have a V8 tree in your
backyard?

I really think you need to reread the OP.

Barb Schaller makes watermelon rind pickles and I have at least 1
recipe for watermelon rind preserves.

I actually did know a few of those, like the Strawberry answer, but I
missed the one about the perennial veggies. I guessed peppers and
onions. I have a pepper bush that is now over 7 years old that comes
back from the base every year and is huge. It's not being replanted from
seed. I also have a large number of spring onions that appear every
year with no help from me!

I guess that peppers are technically a fruit, but onions sure aren't.
Garlic can also grow from the bulbs that remain in the ground.
