Default RECIPE: Tried and true Gazpacho

Gazpacho
(from Colorado Cache Jr. League Cookbook)

Ingredients:
3 large ripe tomatoes, seeded and chopped
1 green bell pepper, chopped
1 cucumber, seeded, peeled and chopped
1 cup chopped celery
1/2 cup chopped green or sweet onion
4 cups tomato juice (V-8 is better)
5 TBSP red wine vinegar
4 TBSP good olive oil
2 tsp. salt (I recommend "to taste"--tomato juice/V8 are salty)
1/2 tsp. freshly ground black pepper

Garnishes:
2 avocados, chopped
sour cream
croutons

Chop vegetables finely. (Note: I've had this made in a food processor
and hand-chopped is better.) Combine all ingredients in a large
non-metallic bowl and chill overnight. (The original recipe calls for
adding avocados before chilling, but they get mushy.) You may vary the
amounts of ingredients of course.

Serve cold and pass garnishes in bowls.

One doesn't cook this one at all? Looks like a healthy food I could enjoy.
