Default Barb Schaller's recipe

Barb said she would not post so she said I could go ahead. It really looks
great. I did not post the remarks about the recipe so if you want to see
them you will have to buy the book. It doesn't look like you would lose
any money if you purchase it because it really looks like an interesting
book.

Barb Schaller's Cream Cheese Coffee Cake

Makes 12 to 16 servings.

FOR DOUGH:
1/4 cup scalded milk
2 tbsp sugar
1/2 tsp salt
1/4 cup butter
1 package active dry yeast (2 1/4 teaspoons)
1/4 cup warm water (120 to 130 degrees)
1 egg
1 3/4 cup all-purpose flour

FOR FILLING:
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 egg
1 tsp vanilla

FOR TOPPING:
1/2 cup butter
3/4 cup sugar
1 cup flour

Prepare dough: Combine the milk, 2 tbsp sugar, salt and 1/4 cup butter.
Dissolve the yeast in the warm water. Cool the yeast mixture and add to
the milk mixture. Add the egg and flour to the yeast mixture--dough will
be soft and sticky. Place in a greased bowl and let rise until double, 30
to 45 minutes.
When dough has doubled, roll or pat dough into a circle. Place in a
greased 16-inch pizza pan. With greased fingers, shape as a pizza crust
with an edge.
Make filling by creaming the cheese and sugar together and adding the egg
and vanilla. Pour filling evenly over the prepared crust.
For topping, cut the 1/2 cup butter into the 3/4 cup sugar and 1 cup flour
using a pastry blender, working until mixture is crumbly. Sprinkle on top
of cream cheese filling. Let crust rise 30 minutes before baking.
Bake in preheated oven at 375 degrees for 20 to 25 minutes, or until
brown. Cut into wedges.

I'm guessing that the comments go something like this:

"If you mess with the recipe, don't blame me. It says 'Cream Cheese' not the
low fat stuff. Butter means butter, not margarine or Crisco. Sugar doesn't
mean Splenda or the like."
Am I close?

So does this cookbook include variations on lutefisk recipes along the
line of Alan Zelt's?

Nope. There is a legitimate lutefisk recipe, though, IIRC.

A "legitimate lutefisk recipe."

Now there's a curious turn of phrase.

......Alan. ;-)
