Default Pippin Apples?

I found a recipe for an apple cake that I'd like to try. Problem is that it
calls for Pippin apples, and we don't get those here.

Are they a tart apples? Could I subsitute Granny Smiths for them? MacIntosh
or Gala?

They're a tart apple. Granny Smiths would make a good substitute.

I'd go for Gala. Pippins are very fragrant, with a good acid/sweetness
balance. I think Gala is the closest to that.

Granny Smith is an OK substitute. Both are tart; GS has a fruitier
flavor. I don't much like them, myself: too thick-skinned and chewy
rather than crisp. If you get good McIntoshes in your area (the ones
from BC that we get in SoCal are worthless), they would be different
but also good. Galas have Golden Delicious in their ancestry, which
makes them crummy cooking apples.

Tell us about "red apples", Isaac. I've never heard of them - or maybe I
know them by another name.

Actually, both galas and golden delicious are great pie apples, although
obviously not what this particular recipe is calling for.

So are pippins. You must've tasted some that weren't yet ripe.
