Pippin Apples?
I found a recipe for an apple cake that I'd like to try. Problem is that it
calls for Pippin apples, and we don't get those here. Are they a tart apples? Could I subsitute Granny Smiths for them? MacIntosh or Gala? |

I don't much like them, myself: too thick-skinned and chewy rather than crisp. If you get good McIntoshes in your area (the ones from BC that we get in SoCal are worthless), they would be different but also good. Galas have Golden Delicious in their ancestry, which makes them crummy cooking apples. -- Chris Green |

Red Apples?
Tell us about "red apples", Isaac. I've never heard of them - or maybe I
know them by another name. > > They're sure not crisp after they're cooked. We tried GS apples for "red > apples" (using cinnamon redhots) one Thanksgiving; we wound up with "red > applesauce", which was pretty good, but not at all what we wanted. > > Isaac |

More than "tart"--a "pucker" apple. >Could I subsitute Granny Smiths Maybe 2/3 Granny Smiths, 1/3 crab apples. |
