Check this... nothing up my sleeves...

Bake the potatoes first.
Then lower the oven temperature.
Place potatoes aside while ham heats.
Then for the last 30 minutes place spuds back into oven with ham to
reheat.

Like MAGIC!

Whoa, that's not my sleeve, you're peeking up my pants leg...
got a magic wand up there, for sawing the ladies in half! hehe

If I do that, and the ham is going to cook for 100-120 minutes, when
should I put the potatoes back in to ensure they get hot, but the top
doesn't burn?

Wish I had a double oven.

Foil over the tatter dish to prevent burning and allow say 45 minutes or
so.

Yeah. Have to agree. It's not exactly 'rocket science', is it?

Cook one or the other in the smoker on the patio? If you control the fire
and use the correct charcoal, there will be no smoke taste(unless you want
it).

I would bake them both at the same temp. The ham would bake for a lot
shorter time and the potatoes longer. Take the ham out before the potatoes
are completely done and crank up the temp to finish them off. 350 seems
like a happy medium.

Cook potatoes first... turn down oven, leave potatoes on counter
covered with a clean cloth while you cook ham, add potatoes back ten
minutes before eating to warm up again.
