It isn't? sigh I personally doubt that soak/discard or boil/discard will remove much of the high-molecular-weight sugar (or if you prefer, low- molecular-weight startch) that is believed to cause gas. It seems to me the beans retain almost all of their original bulk no matter how you cook them. Haven't seen any actual research on this though. Steve |
