Default Lettuce Wraps, chicken or beef...

I am getting together a recipe notebook for one of my daughters. She
mentioned once that she really enjoyed the lettuce wraps she had at an
Asian or Chinese, if that is more correct, restaurant in Utah.

There are plenty of recipes for me to choose from but would like to know
whether some of you prefer chicken or beef and a suggestion on the sauce
you enjoyed the most would be a big help.

She said that the stuffing was prepared at the table and you stuffed the
lettuce yourself. I've never tried them myself but thought it would be
fun to include a recipe in her notebook. I wont make it to Utah until
next year but she said that they have some very good Asian restaurant
there as compared to rural Oregon. I'm anxious to try one when I visit
next year.

Thanks for any help....
Sincerely, Helen

I'm a new lurker here...couldn't pass this one up
I could eat PF Chang's lettuce wraps all night long...I prefer the chicken

The stuffing is already prepared when they bring it to the table...but they
do mix the sauce to your liking at the table. The stuffing is cut up very
small. I saw some PF Chang wrap recipes on the web...they looked
yummy...haven't tried any of the recipes yet

Thanks for the info... it helped narrow down my choices of recipes
considerably. I ran across some discussions also in regard to this
appetizer with some suggestions on what might make it most like what is
served at his restaurants. I will add the notes at the bottom of this
before I print it.

PF CHANG'S CHINA BISTRO LETTUCE CHICKEN WRAPS

8 dried shiitake mushrooms
1 teaspoon cornstarch
2 teaspoons dry sherry
2 teaspoons water
Salt and pepper
1 1/2 pounds boneless, skinless chicken
5 tablespoons oil
1 teaspoon fresh minced ginger
2 cloves garlic, minced
2 green onions, minced
2 small dried chiles (optional)
1 (8 ounce) can bamboo shoots, minced
1 (8 ounce) can water chestnuts, minced
1 package cellophane Chinese rice noodles, prepared according to package

Cooking Sauce
1 tablespoon Hoisin sauce
1 tablespoon soy sauce
1 tablespoon dry sherry
2 tablespoons oyster sauce
2 tablespoons water
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons cornstarch
Iceberg lettuce leaves

Cover mushrooms with boiling water, let stand 30 minutes then drain. Cut
and discard woody stems. Mince mushrooms. Set aside.

Mix all ingredients for cooking sauce in bowl, and set aside.

In medium bowl, combine cornstarch, sherry water, soy sauce, salt,
pepper and chicken. Stir to coat chicken thoroughly. Stir in 1 teaspoon
oil and let sit 15 minutes to marinate. Heat wok or large skillet over
medium high heat. Add 3 tablespoons oil, then add chicken and stir fry
for about 3-4 minutes. Set aside.

Add 2 tablespoons oil to pan. Add ginger, garlic, chiles (if desired),
and onion; stir fry about a minute or so. Add mushrooms, bamboo shoots
and water chestnuts; stir fry an additional 2 minutes. Return chicken to
pan. Add mixed cooking sauce to pan. Cook until thickened and hot.

Break cooked cellophane noodles into small pieces, and cover bottom of
serving dish with them. Then pour chicken mixture on top of noodles.
Spoon into lettuce leaf and roll.
Servings: 1

Thanks much for the help!
Sincerely, Helen

My son makes GREAT lettuce wraps - they are simple and good!

1st - grill chicken breasts (they HAVE to be grilled) on the
Webber and slice them to serve.

2nd - you MUST use Butter (or that type) lettuce to wrap.

Serve them with these garnishes:

*Chopped peanuts (a crucial must have, in his opinion)

*Shredded carrot

*bean sprouts

*diced cucumber (marinated in white vinegar and black sesame
seeds)

You MUST have coriander. MUST.

mouth out ?

Right back atcha, it's common knowledge that it's genetic ... to some
people coriander tastes like soap. Happy to clue you in.

Yeah, but it tastes like good soap.

(laugh!!!) Okay, it's just me, I prefer my food not taste like
any kind of soap. Nothing against it, I even tried to grow it one
year, I just don't think it tastes like food.
