How healthy... doesn't it just sound delicious? They're really

It actualy tastes better then it sounds.. but my kids wont eat it. Bonnie
does not care for hotdishes. Xavier just wont eat tater tots

I don't think they're much interested in encouraging the kids to rise to
new heights of culinary sophistication, Karen. They're mostly
interested in reducing food waste and filling empty bellies within the
constraints of their budget. It's tasty - meat, vegetables, potatoes,
gravy; easy to serve and easy to eat with the tools provided. I suspect
the salt and fat content could be reduced by subbing a homemade binder
sauce and maybe using a different preparation of the spuds - but thenit
wouldn't be Tater Tot Hotdish, would it? "-)

Kids at my school would scarf down the tater tot casserole and I'd be
glad to see them do it. It's a lot easier to teach a child who has a
full belly and stable blood sugar. Lunches at my school have gone
downhill rapidly the past few years as our new dietician is more
interested in the bottom line than nutrition and appeal. Kids aren't
eating and afternoons are cranky. I'd probably buy hot lunch on tater
tot day, too.

Oy? What do you have against frozen vegetables? I've eaten frozen corn
(kernels) that was a lot tastier than some fresh I've eaten. Frozen
peas? What's wrong with those? I prefer fresh green beans - in fact,
I use frozen ones only in vegetable soup.

I have used dehydrated veggies in soup but dont care for them,
primarily its taste, fresh veggies have not only more flavour but i find
most frozen veggies bland and tasteless.

Of course i am lucky enough to live in a temperate area with fresh
veggies available year round, other wise i would probly have to make do
with preserved veggies of one sort or another.

I grew up on me mums "canned" fruits and veggies and seem to have
survived it.

The "elderly relative" thought she was being frugal when she found some
inexpensive cans of asparagus on sale and bought several, what an
abomination that was.

Though i was able to puree them with some creme, black pepper a bit of
lemon zest & garlic and serve as a soup which she liked much better than
the asparagus warmed up straight from the can.

I am guilty of keeping frozen peas around for her sake but if i want
peas i get them freshly shelled for less than a dollar a pound.

Now that i think about it i do keep frozen potatoes around just for
convenience, really for the elderly relative but i have been know to
nuke a frozen potato patty for myself on occasion.

For the most part Frozen taste better then Canned. And they tend to not be
as mushy. Not to mention they are not packed in salt water. Sometime in the
last 3 years I became sensitive to too much salt.

Winter In wisconsin is not good for fresh veggies. I did get letuce, though
verry small heads... dont know what Jeff was thinking when he picked them
out. Also got cucumbers, tomatos and brocoli and some mushrooms. Those all
should make some good salads this week.

Oh canned asparagus is nasty. I LOVE fresh or Frozen. My kids even like
it.

Hmmm I dont think I have seen fresh peas in a while. I bet they have them
at Market Place. We stopped shopping there when Walmart Came in.

I LOVE fresh green beans.. my mil admitted this year that she only likes
canned green beans and probably wont plant them again Her garden is
slowly becoming a Salsa Garden. Mostly Tomatos with some misc. other things
like squash and potatoes.

That looks pretty much like the old Tater Tot Casserole that was popular in
the late 70's. No onion or shrooms in that one and green beans instead of
peas.

I've made a similar dish for my daughter and she loves it. She has food
allergies so I can't use prepared soups or even the Tots for that matter. I
usually use Spud Puppies or certain brands of hash browns that she is not
allergic to. I use canned green beans and sometimes add corn or whatever
other leftover veggies I have. I add chopped fresh onion and celery to the
meat when I cook it. Chicken can be subbed for the beef. I make a gravy of
some mushrooms and a bit of chicken or beef broth. It's very good. Cheese
is also good added to this but she's allergic to that too.

Yeah, what's up with that?

When I was a kid growing up in one of the richest vegetable-growing areas
in the US (California's Central Valley), it was my mom's default for "the
fresh doesn't look good/is way out of season and costs way too much". Mom
is still picky about produce.*

She disliked most canned veggies, having had a quantity of bad experiences
as a girl: a father who shopped the dented-can specials and stored them
forever, summer cannery work as a teen, and horrid dorm food. Canned corn
(and of course tomato products) were about the only veg we saw in cans in
the house. Frozen was next-best to fresh in her mind. She was particular
on the brands she bought (some are better than others).

* When she had a bad bout of arthritis and couldn't get out much, my dad
took over the grocery shopping. He got told in no uncertain terms to
only buy produce at Raley's (very conscientious local chain) and at the
farmstand because she was not pleased with the quality at other markets.

Barb, if I ever see tater tots at the food bank, or I see everything else
but tater tots, I'd so make this in mass quantities for my feed-the-hungry
exercise ... it would probably be a huge hit. Comfort food, and I say it
as someone who always ate tater tots on the side . mmm mmm mmm, crispy
potatoes ...
