I made mashed cauliflower with low fat ricotta and horseradish,
mustard greens and seared beef with a poblano, shallot, cider, mustard
sauce and a few scallions sprinkled on top.

You mixed the cauliflower with ricotta? Where did you get that idea?
What were the proportions?

D suggested it. I was going to buy some yogurt, but she talked me out
of it. I used half a head of cauliflower and about two Tbs of ricotta
along with about a Tbs olive oil and the same amount prepared
horseradish.
