Default Short ribs Eat your hearts out

It has been a long time since I have had a good feed of short
ribs. They are usually just too expensive for meat that needs so
much work and such a long cooking time to be good. Today I went
to one grocery stores to get a few things but found it closed due
to computer problems. I ended up going to the one closer to home
that i usually avoid because it is so much more expensive. It
turned out that they had some good sales on beef. I picked up a
couple of nice looking rib eye ribs steaks for dinner. Then I
spotted short ribs with a huge yellow sticker indicated they were
on special.

I bought three small packages of them for $1-1.25 per back,
with three pieces of rib per pack. As soon as I got home I
browned them, then fried up some onion carrot, celery and garlic,
poured in some beef stock and a bit of tomato paste and then
spiced it up a bit with some parsley and savory, put the ribs
back in and put the pot in a 300 degree oven for a few hours. I
will thicken up the sauce and reheat the ribs for dinner
tomorrow.


I sure am glad that other store was closed.

They used to be cheap, cheap, cheap here. We used to eat them
quite often because my wife has a real knack for braising. Thirty
years ago when we were first married, I could get enough short
ribs or oxtails for a really good feed for under 30 cents. Sure,
everything has gone up since then, but not like short ribs. The
last time I even looked at them it was $12 and change for a pack
that would not even feed the two of us.

The ribs and juice are cooling now. I will reheat them for dinner
tomorrow. I had a taste after I reduced the sauce and it is
delicious.

Sounds like when I "discovered" skirt steak, (hanger steak), years
ago.

When the butchers realized people were buying this cheap, tender cut 3
or 4 pounds at a time, the price tripled immediately and never came
down.

The same thing happened with oxtails.
